there should be a README and INSTALL file inside the tar.gz package diescribing the installation procedure.

But i would suggest to install gnucash with the packagemanager of your distribution, in stead of downloading/installing it manually. Most distributions offer gnucash by default or have additional packagemanager sources that provide it.

Check the manual of your distribution for more information about packagemanagement.
